Weet-Bix Wonder Bars

These are the best thing we’ve eaten since arriving  in New Zealand and thought the recipe was just too good not to share. It should be with all the butter it requires! This recipe makes a bar with a wicked crunch and just the right amount of sweet. Enjoy one on us!

Note: The measurements have been translated from metric (therefore not US tested) and the wheat biscuits can be purchased from Trader Joe’s, last I checked. Sorry, in advance, to our gluten-free friends – though this might work well with a g-free granola bar substitution.

WEET-BIX WONDER BARS

4 crushed Weet-Bix
1 cup flour
1/2 cup sugar
1 tablespoon cocoa
1 cup coconut
1/4 teaspoon salt
1 teaspoon baking powder

Mix all dry ingredients together, making sure all wheat biscuits have been crushed.

Melt:
1 teaspoon vanilla
1/3 cup butter

Slowly mix into dry ingredients until absorbed. Press into shallow pan.

Bake at 350 for 15 minutes. Frost with chocolate icing (powdered sugar, cocoa powder and milk) and dust with coconut.
